Red Noodle Bean-(Vigna unguiculata)-This bean is also called the Asparagus bean or Yard Long Bean. It is common in Southern China. The beans can grow to a length of 22 inches or more. But are best when harvested at about 12 inches. They are tender, stringless and sweet. Cut into small sections they make a welcome addition to any stir-fry dish.
